Blades scoringA digitally controlled robot is used for scoring. The knives which make incisions in the dough at high speed are programmed with sequenced 3D-movements.
Scoring is adjustable to suit any product and 20 scoring schemes are stored in memory to execute most of the current scoring types.
Soaking the knives in water between two scoring operations extends the life of the knives and ensures a clean cut, even in fragile, highly fermented dough.
