4 different lines for puff pastry production
The EMPII-E Proofer is designed for automatic continuous proofing on trays 2000 x 800 mm.
It is composed of :
One transfer Mechanism
Constituted of juxtaposed motorized modules with a width of 2.4 m and a length of 1.8 m in tunnel direction. Each element consists of one up-going and one down-going pile running simultaneously.
The transfer of the trays from pile to pile is made by means of an electrical pusher at the top and a conveyor at the bottom. The proofer includes a going-through conveyor equipped with retractable stoppers underneath each element allowing to work with partial filling capacities.
By lowering all the stoppers, the machine can be completely by-passed.
The trays are moving perpendicularly to their width of 2 000 mm.
The mechanism of trays transfer is equipped with automatic chain tensioners.
One air-conditioning system
The air-conditioning is ensured by a set of air-conditioning units. Each unit includes one exchanger fed with glycol water or chilled water from the customer main circuit, integrated in a cool down loop and with a fan. Inside the proofer, the humidity level is controlled by steam injection, using an automatic steam valve directly connected to the main steam network.
