Production modules in detail

MECATHERM's automated production lines are modular and include all phases of the baking process.

Proofing




Final proofing constitutes the lengthiest phase in the production process, in particular for those products with “fresh” proofing and low yeast percentage, as is the case for “French” products.

MECATHERM has developed a proofer principle based on individually motorized tray handling modules, which permits the selection of active modules and easy adjusting of the final proofing time. Thus it is possible to by-pass the last proofing module to speed up proofing before entering the oven.

The product is transported through the proofer following the principle that each tray always takes the same way, to achieve an even proofing result whatever the chosen proofing time.

Our proofers are available in two versions :
- stainless steel structure and housing; windows allow visual control of the product at all times;
- or with air-conditioned isothermal housing made of insulated panels, with a tray transfer mechanism on the inside. Consisting of several modules, this version has doors and internal corridors which provide access for easier maintenance and control of the proofing process.
