Madero: Consistent, high-quality buns with MECATHERM
Founded in Brazil in 2005 by Junior Durski, the Madero Group is a key player in the Brazilian restaurant industry. The company’s goal is clear: to offer high-quality hamburgers while maintaining product consistency at scale.
To achieve this, Madero partnered with MECATHERM to implement a dedicated production line for pre-baked frozen buns. This decision was driven by the demand for improved product quality, consistency, and industrial performance.
“We make our bread in a machine from MECATHERM. From my point of view, we have chosen MECATHERM uniquely for its quality. Making the best bread in the world was always my goal. The high quality of products made by MECATHERM is unrivaled by other brands available on the market.”
- Junior Durski, Founder and President of the Madero Group
The line Madero Group implemented achieves a production rate of around 14,000 buns per hour while ensuring product uniformity, which is essential for maintaining consistent quality.
The installation included an MVS handling system for the proofer, followed by a cooler and freezer. It also features an automatic water scoring system and an S vertical oven. Operating at an industrial scale, Madero places particular emphasis on throughput, consistency, and product uniformity. The MVS system provides even bun treatment throughout every stage of the process, while the vertical oven ensures precise baking to achieve the desired texture, taste, and appearance.
“The quality of the products that we are achieving by utilizing equipment from MECATHERM allows us not only to continue growing, but also ensures we will always offer exactly the same excellence and quality product to all of our customers.”
- Ariel Szwarc, Chief Financial Officer
Beyond the production line itself, Madero highlights the support provided by MECATHERM’s teams. During installation, experts and bakers delivered technical and operational guidance all the way up until the moment we handed the equipment fully over to Madero’s local teams.
Today, the installation operates with minimal downtime thanks to its high reliability. When needed, MECATHERM’s after-sales service reacts swiftly to maintain production continuity.
This project illustrates how Madero relies on a well-adapted industrial tool and strong technical support to drive its development while ensuring consistent product quality.
