The Combi Bloc is a moulding bloc.
For short loaves of toast bread type: the dough pieces are moulded by a triple laminator and moulding boards prior to depositing. Deposited in double lane to allow a more compact equipment.
For long breads like baguette, half-baguettes and rolls: the dough pieces are moulded by a laminator and moulding boards and then deposited on trays or peelboards.
Individual dough piece weight: from 200 to 900 grams
