Crispy puff pastry and rich cream

The secret of pastel de nata is in the combination of a crispy puff pastry and a rich cream. Loïc presents his technique to obtain the characteristic flakes that appear on the edge of the product after baking.

"The baking stage is one of the great challenges for the industrial production of pastel de nata. During this stage, we will obtain, on the one hand, a crispy and dry puff pastry, and on the other hand, a controlled coloring of the cream, while preserving its richness,” explains Loïc.
