The madeleine is truly part of the heritage of French gastronomy. Its main characteristics include a beautifully developed dome and a marked shell-like indentation at the base of the product.

Over time, this fantastic pastry has also been able to adapt to different market trends through its many variations, each one displaying even more gourmet character.

By varying certain ingredients, you will discover how to obtain different results. Adding trimoline, for example, will let you obtain a faster coloring of the product, but will also improve the texture of your madeleine,” adds Loïc.
