Product Diversity and Quality

Thanks to gentle mechanical actions, the M-NS II Divider produces dough pieces without stretching or tearing. This preserves the dough’s internal structure and combined with the M-RT moulder, they create products with aregular shape, generous volume with a more or less open structure. It also uses only a small amount of dusting flour, enhancing the bread’s aroma while delivering a thin, crispy, and shiny crust.

These technologies can handle a wide variety of doughs, including highly hydrated and  fermented doughs, as well as those made with demanding ingredients such as sourdough, poolish, or seeds.

Reducing product losses

The M-NS II Divider and the M-RT Moulder incorporate numerous solutions to optimize production and reduce non-compliant product losses, thereby helping to minimize raw material waste.
